Côte’s meat comes from responsible farmers in Britain, Ireland and South America and their expert butchery team ensures that every piece is cut, trimmed and prepared in house, before it even arrives in their kitchens. It’s this attention to quality and consistency that makes Côte steak the best steak. Côte’s signature cuts – like their famous Côte de Boeuf – are carefully prepared and individually matured every time. Their Himalayan salt ageing room has been created to both tenderise meat and add intense depth of flavour. By slowly and naturally drawing moisture away from the marbled bee, the process allows for improved taste and quicker caramelisation during cooking.
